This was an especially good week to reset and refresh as we came off of the holidays and back to the grind! I hope these recipes brought as much brightness to your day as the did mine.
Health benefits of pineapple
Pineapple is far from just a pretty garnish! It can help with digestion (contains an enzyme called bromelian), rich in vitamins (especially vitamin C), minerals like manganese (helps with growth and metabolism), and is FULL of fiber, water, and antioxidants.
What is coconut water and how healthy is it?
Coconut water is the liquid found inside of a coconut. Coconut milk on the other hand is an emulsion of shredded coconut blended with water. Coconut water is low in calories and contains some electrolytes; while it can add a hint of coconut to the smoothie, it may not be the most reliable substitute for replacing electrolytes for long bouts of exercise. Coconut water will keep you hydrated, but when you exercise three hours or longer in the heat or adverse conditions, your body requires higher levels of simple carbohydrates and electrolytes not adequately found in coconut water. Choose a coconut water that is unsweetened if purchasing.
Coconut water or a lite coconut milk works great in this smoothie together with the tropical fruits. It pairs beautifully with the pineapple and banana in this recipe and is a great dairy-free option for all smoothies. Or of course, you can simply use your preferred milk of choice instead of coconut milk or coconut water in a pinch (you just won’t get that same flavour)!
